This refried beans recipe is flavorful and healthy version with a little heat minus the lard.  My dear friends Brandy and Eddie Ramos (home cooks) share this simple vegan dish.  It’s a low maintenance Mexican recipe requires a potato masher and a few ingredients that Sun Vista pinto beans, jalapeno, half a small onion, and a little bit of vegetable or canola oil.  Based on your heat tolerance level you can decide to remove seeds for a mild heat, and keep it if you like your beans spicy.  Add some garlic salt to taste. Make it for the Cinco de Mayo festivities this weekend or anytime! Great to use as a side dish, snack with tortilla chips, or add to your burrito concoction.  Provecho!

A simple vegan recipe with a little heat and a lot of flavor.
Ingredients
  • 1 29 ounce can of Sun Vista Pinto Beans and half the liquid contained in can (approximately ⅔ cup)
  • ½ a small onion diced
  • 1 jalapeno diced
  • 1 Tbsp of Canola or Vegetable Oil
  • Garlic Salt to taste

Instructions
  1. Heat oil in a large sauce pan on high
  2. Add diced jalapenos and onions. Saute for 4 minutes until before onions brown.
  3. Add pinto beans and half the liquid from can and stir well
  4. Bring mixture to a boil
  5. Turn down to low medium heat to simmer for ten minutes and cover. Stir occasionally.
  6. Mash beans well and add garlic salt to taste
  7. Serve hot/warm with chips as an appetizer, side for your plate, or add to your burrito or taco concoction!

Notes
*Potato Masher utencil is required to mash beans when cooked *Keep seeds in if you like beans extra spicy, otherwise remove for mild flavor *HauteNosh notes – recommend to drain all liquid from can into a measuring cup, then use half of the liquid.
