This is a family recipe that I was fortunate to wake up to many of my mornings as an American pinay teenager.  It’s an east meets west fusion dish when garlic fried rice merges with traditional bacon and scrambled eggs.  My family always uses day old brown rice versus fresh, as it holds better.  Also a great way to repurpose leftover rice! Traditionally my parents used white rice, but their diet habits changed when they were both diagnosed with diabetes type 2.  Bacon Fried Rice can be served as a side dish for meals with BBQ beef, veggie, shrimp skewers or grilled protein of your choice.

An Asian fusion delicious family recipe that can be served as breakfast or a side dish to a meal.
Ingredients
  • 6 ounces of thick sliced bacon (approx. six slices)
  • 2 cups of day old brown rice
  • 1 tablespoon vegetable or canola oil
  • 1 tablespoon of soy sauce
  • 2 garlic cloves minced
  • 3 large eggs

Instructions
  1. Take two sauce pans. In one using a little canola scrambled eggs and cook into an omelet. Then break up with spatula.
  2. Chop bacon evenly and cook in a large sauce pan. Take bacon and mix with eggs.
  3. Drain out most of the bacon fat, but it can also be used to add more flavor based on your preference.
  4. In the same pan that bacon is cooked in, take veggie or canola oil and heat up, then cook minced garlic before it browns. Medium high
  5. Lower to medium hear. Add rice and mix well garlic and oil with a wooden spatula,
  6. Then evenly add in the soy sauce, bacon and eggs and mix well.
  7. Salt and pepper to taste
  8. Serve immediately/warm
