Simply Lemon Brussels Sprouts

brussel sprouts 1Inspired by a side dish served at Spaghettini in Seal Beach, I ended up buying a pound of Brussels Sprouts from Trader Joes and cooked it up the very next day.  Spaghettini’s Brussels Sprouts were cooked perfectly and and used lemon to enhance. This recipe is my attempt to replicate a similar fresh lemon flavor.  As many of you know, Brussels Sprouts can be a challenging veggie to cook and to eat!  When cooking Brussels Sprouts, be sure not to over cook as it will release a bitter taste and unpleasant odor.  Brussels Sprouts are part of the cabbage family and offer health benefits including protein, fiber, and vitamins C.  If you like Brussels Sprouts less dense I recommend you slice Brussels Sprouts in quarters.  Perfect to serve as a side or starter dish. A simple vegan side or starter dish that is delicious and filled with nutrients.
Ingredients
  • 1 lb. of Brussels Sprouts, base removed, halved or quartered
  • 1 lemon for cooking purposes
  • 1 lemon cut into wedges when serving
  • 1 garlic clove finely chopped
  • ½ cup of cashews or Marcona almonds (optional)
  • 2 Tbsp of Extra Virgin Olive Oil
  • ½ tsp of sea salt
  • ¼ tsp of fresh ground pepper

Instructions
  1. Place cut pieces of Brussels Sprouts in a medium/large size bowl
  2. Add in 1 Tbsp of olive oil, and juice from one medium sized lemon. Mix well using hands.
  3. Heat up a saute pan on medium high and add 1 Tbsp of olive oil
  4. Once heated add garlic for a 2-3 minutes stirring occasionally.
  5. Add treated Brussels Sprouts and decrease heat to low-medium, and stir well with a wooden spoon.
  6. Add salt, pepper, and nuts. Continue to stir well from 8-10 minutes, keeping an eye on leafy texture so it does not over cook.
  7. Remove from heat and serve hot/warm and serve with lemon slices or wedges
